Recommended recipe: Stir-fried shrimps with fungus and cucumber.

Soak black fungus in water, remove the roots after soaking, then wash well and tear into small pieces for use. Scrub the cucumber and cut into diamond-shaped slices for use. Chop the ginger and garlic and set aside.

Peel the prawns, remove the threads, rinse and drain, add the wine, pepper, salt, ginger and cornstarch, mix well and marinate for ten minutes.

Add a little cornstarch and water to a bowl and mix well until ready to use. Add the water to the pan, bring to the boil and add the fungus, cook for two minutes and remove from the pan.

Heat the oil in a separate pan and stir-fry the prawns until browned. Add the cucumber and fungus and stir-fry for a minute.

Pour in a little salt and chicken seasoning and stir-fry evenly, then add the shrimp and stir-fry evenly.

Pour in a little cornstarch and stir-fry quickly for a few minutes, and the dish is ready.

Three, mushrooms (rich in vitamin D, calcium, zinc, etc.).

Recommended recipe: Stir-fried pork with mushrooms and carrots.

Rinse the lean pork, cut into thin slices, add salt, pepper, soy sauce and cornstarch and marinate for 10 minutes.

Wash and cut the mushrooms into thick slices and set aside. Peel and wash the carrots, cut into thin slices and set aside. Chop the garlic and spring onion and set aside.

Heat the oil in a pan and stir-fry the sliced meat until browned.

Add the minced garlic, mushrooms and carrots and stir-fry until the mushrooms are soft and watery.

Add the meat and spring onions and stir-fry for half a minute, then add a little salt and oyster sauce and stir-fry quickly for a few minutes.

IV. Scallop (rich in vitamin D, calcium, protein, etc.).

Recommended recipe: sweet and sour scallops.

Treat the scallops well, rinse and chop them into small pieces. Then add cooking wine, salt and ginger and mix well and marinate for 30 minutes.

After marinating, clip out the scallops and wipe them with kitchen paper towels, as the water from the marinade has a fishy smell and it is better to remove it.

Pour the cornstarch into the pan and add the scallops, coating both sides with the cornstarch.

Heat the oil in a pan to 50% heat, add the scallops, turn the heat down and fry for a few minutes.

Then add the patted garlic and ginger and stir-fry. When the aroma comes out, add a little water, then add the cooking wine, sugar, soy sauce, vinegar and thirteen spices to season the flavours.

Add the scallops to the pan, turn the heat down to medium-low and cook for a short while, then remove from the pan after the sauce has thickened.
